The Ultimate German Grilled Bratwurst Recipe | Bull BBQ EU

Guten Morgen! Today, Chef Mark is taking our taste buds on a trip to Germany. We’re moving past the everyday hot dog and creating its legendary ancestor: the Bratwurst. But we’re not just making any bratwurst; we’re creating an epic, XXL baguette designed for the whole tribe to share.

Served with classic purple sauerkraut (Rotkohl) and buttery jacket potatoes, this is the perfect meal for any gathering. It’s simple, hearty, and full of incredible flavour. Let’s fire up the Bull!

Ingredients

For the Bratwurst Baguette:

  • 1 large, fresh baguette (the longer, the better!)

  • 6-8 high-quality German-style Bratwurst sausages

  • 150g Red Cabbage Sauerkraut (Rotkohl)

  • German mustard (or Dijon), for serving

For the Garlic-Herb Butter:

  • 100g salted butter, softened

  • 2 cloves garlic, minced

  • 1 tbsp fresh parsley, finely chopped

For the Grilled Jacket Potatoes:

  • 2 large baking potatoes

  • Olive oil

  • Coarse sea salt

  • Butter, to serve

Equipment

  • Bull BBQ Grill

  • Tongs

  • Tin foil


Instructions

Step 1: Prepare the Jacket Potatoes

  • Start by washing your potatoes. Prick them several times with a fork, then rub them with a little olive oil and a generous amount of coarse sea salt.

  • Wrap each potato tightly in a double layer of tin foil. This will help them steam and cook through on the grill.

  • Place the foil-wrapped potatoes on the upper warming rack of your Bull grill, or on the main grates over indirect heat. They will need around 45-60 minutes to cook, depending on their size.

Step 2: Prepare the Baguette

  • While the potatoes are cooking, prepare your epic baguette. Slice it open lengthwise, but not all the way through, so it opens like a book.

  • In a small bowl, mix the softened butter with the minced garlic and chopped parsley until you have a smooth compound butter.

  • Generously spread the garlic-herb butter on both inside halves of the baguette.

Step 3: Grill the Bratwurst & Bread

  • Preheat your main Bull grill burners to a medium heat (around 180-200°C or 350-400°F).

  • Place the bratwurst directly on the grill grates. Cook for 15-20 minutes, turning them every few minutes until they are beautifully browned on all sides and cooked through.

  • During the last 5-7 minutes of cooking, place the buttered baguette cut-side down on the grill. You want it to get golden brown, crispy, and beautifully toasted. Keep a close eye on it as it can burn quickly!

Step 4: Assemble Your Masterpiece

  • Once the bread is toasted, remove it from the grill and place it on a large serving board.

  • Spread a generous layer of the purple sauerkraut (Rotkohl) down the length of the baguette.

  • When the bratwurst are perfectly cooked, place them on top of the sauerkraut.

  • Finish with a generous zigzag of German mustard all over the sausages.

  • Carefully remove the potatoes from the grill (they will be very hot!), open the foil, and top with a knob of butter.

Step 5: Serve and Enjoy!

  • Present the entire baguette to your guests and slice it into portions for everyone to share. Serve with the hot, buttery jacket potatoes on the side. This is a meal that brings everyone together. Cheers
